
This vibrant green juice combines the cooling properties of cucumber with the zesty kick of ginger and fresh coriander. It's a nutrient-packed, hydrating drink that's perfect for a morning boost or a mid-afternoon pick-me-up.
Place the roughly chopped coriander, cucumber, and ginger into a high-powered blender.
Add the lemon juice, maple syrup, 200ml of water, and a small pinch of salt to the blender.
Blend on high for 1-2 minutes until the mixture is completely smooth, stopping to scrape down the sides once or twice if needed.
For a lighter consistency, strain the liquid through a fine-mesh sieve into a glass. Serve immediately over plenty of ice.
For a more savory version, omit the maple syrup. You can also substitute the plain water with coconut water for added electrolytes and a subtle tropical flavor.
