In a large, clean glass jar, combine the dry gin, amaretto, and brandy. Add the dark brown soft sugar and swirl the jar until the sugar is fully dissolved.
Add the cinnamon stick, allspice berries, coriander seeds, and the vanilla pod to the jar.
Incorporate the sultanas, dried figs (or dates), and the strips of lemon and orange zest.
