Place the fresh blackberries and caster sugar into a 1.5-liter sterilized glass jar.
Pour the gin over the fruit and sugar, then seal the lid tightly. Swirl the jar around until the sugar begins to dissolve.
Store the jar in a cool, dark place. For the first week, turn or shake the jar once a day to ensure the sugar fully incorporates.
Leave the mixture to infuse for 2 to 3 weeks. Once the gin has reached a deep purple color, strain it through a fine-mesh sieve or muslin cloth into clean glass bottles.
