
Capture the festive spirit with this rich, spiced Christmas pudding vodka. Infused with a blend of dried fruits, citrus zest, and warm winter spices, it makes a stunning holiday gift or a delicious base for seasonal cocktails.
Begin by thoroughly sterilizing a 1.5-liter preserving jar. Place the currants, sultanas, prunes, glacé cherries, pared orange and lemon zests, dark brown sugar, mixed spice, cinnamon stick, and the split vanilla pod into the jar.
Pour approximately half of the vodka into the jar. Secure the lid tightly, then turn the jar upside down and shake vigorously to ensure the sugar is evenly distributed. Open the jar and add the remaining vodka along with the brandy and amaretto.
Re-seal the jar and store it in a cool, dark place. For the first week, shake or turn the jar once a day to help the flavors develop. Allow the mixture to infuse for a total of two to three weeks.
Once infused, strain the vodka through a fine sieve lined with coffee filter papers or a clean muslin cloth. Decant the clear, spiced liquid into sterilized decorative bottles and label them.
Don't waste the alcohol-soaked fruit! It is perfect for adding to festive bakes like fruitcakes, Christmas puddings, or homemade mincemeat.
For the best results, use a decent quality vodka as the base. While this liqueur will keep for up to two years, the flavors are most vibrant and delicious within the first six months.
