Place the strawberries, oats, and water into a blender or food processor.



Blend the mixture until it reaches a smooth, fine paste consistency.



Transfer the blended mixture into a bowl or jar. Add the honey and chia seeds, then stir thoroughly to combine.



Cover the container and place it in the refrigerator overnight (or for at least 4 hours) to allow the oats and chia seeds to thicken into a pudding texture.



In the morning, give the pudding a quick stir and transfer it to a serving bowl.
Top with banana chips, chopped strawberries, and pumpkin seeds before serving.
