Prepare the fruit by roughly chopping the pineapple into small bite-sized pieces and slicing the banana into thin rounds.
In a large mixing bowl, whisk together the self-raising flour, baking powder, ground cinnamon, and light muscovado sugar until well combined.
Create a well in the center of the dry ingredients. Crack in the egg and add a splash of the milk. Gradually whisk the liquid into the flour, slowly adding the remaining milk until you have a smooth, thick batter.
Gently fold the chopped pineapple and banana slices into the batter until evenly distributed.
Heat a small amount of sunflower oil in a non-stick frying pan over medium heat. Drop heaped tablespoons of batter into the pan, leaving enough space between them to allow for spreading.
