
Indulge in a rich and comforting bowl of creamy rice pudding infused with zesty orange and decadent dark chocolate. This simple stovetop dessert is the perfect warm treat for a cozy night in.
In a large saucepan, combine the short-grain pudding rice, milk, caster sugar, orange extract, vanilla extract, ground cinnamon, and most of the orange zest. Bring the mixture to a gentle simmer over medium heat, stirring constantly at first to ensure the rice doesn't clump together.
Reduce the heat to low and cook for 30–40 minutes. Stir the pudding regularly, especially towards the end of the cooking time, to prevent the rice from sticking or burning on the bottom of the pan. Cook until the rice is tender and the mixture has reached a thick, creamy consistency.
Stir in the dark chocolate chunks until they are completely melted and fully incorporated into the pudding. Serve hot in bowls with a splash of extra milk and a garnish of remaining chocolate and orange zest.
For an even richer texture, use whole milk instead of semi-skimmed. If the pudding becomes too thick as it sits, simply stir in a little extra warm milk before serving to loosen it up.
