
These chicken Caesar bites turn classic Caesar salad flavors into an easy party appetizer. Tender chicken is mixed with Parmesan, anchovy, lemon, and mayo, then spooned onto crisp toasts and topped with crunchy bacon for a savory, crowd-pleasing finish.
In a medium bowl, combine the chopped cooked chicken, anchovies, Parmesan, mayonnaise, soured cream, Dijon mustard, garlic granules, chives, and lemon juice. Mix until evenly combined, then season to taste with salt and black pepper.
Spoon about 1 teaspoon of the chicken Caesar mixture onto each crispbread or melba toast. Top with the finely chopped bacon and a little extra chives, then serve straight away so the bases stay crisp.
You can make the chicken filling up to 2 days ahead and keep it covered in the fridge. For a milder flavor, reduce the anchovies or replace them with a small extra pinch of salt. Assemble just before serving to prevent the crispbreads from softening.
