
These soft and fluffy banana pancakes are the perfect healthy finger food for babies and toddlers. Naturally sweetened with ripe bananas, they are quick to whip up and easy for little hands to hold.
In a medium bowl, thoroughly mash the peeled bananas with a fork until they reach a smooth, mostly lump-free consistency.
In a separate bowl, whisk together the eggs, self-raising flour, and ground cinnamon until the mixture is well combined and smooth.
Pour the egg and flour mixture into the mashed bananas and stir well to combine. For an even smoother texture, you can pulse all the ingredients together in a blender or use a hand blender.
Heat a small amount of the butter and vegetable oil in a large non-stick frying pan over medium heat. Once the butter is foaming, drop 1 tablespoon of batter at a time into the pan to create small, manageable pancakes.
Cook for 1-2 minutes until the edges are set and golden. Carefully flip the pancakes over and cook for a further minute. Repeat with the remaining batter and serve warm, optionally with fresh fruit pieces.
Use very ripe bananas with brown spots for the best natural sweetness. These pancakes are great for meal prep; you can freeze them for up to a month with parchment paper between layers to prevent sticking. If your baby is just starting solids, ensure the pancakes are soft enough and cut into appropriate sizes.
