Prepare the bread: If using focaccia, slice the pieces horizontally to create eight slices total. Lay them out and spread about 1/2 tablespoon of basil pesto over four of the slices. Lightly drizzle the remaining four slices with 1/2 teaspoon of extra-virgin olive oil each.
Assemble the filling: On the pesto-topped slices, evenly distribute the rocket, sliced mozzarella, tomato slices, fresh basil leaves, and red onion rings.
Finish and serve: Drizzle 1/2 teaspoon of thick balsamic vinegar over the olive oil-brushed slices. Close the sandwiches, press down gently, and serve immediately or wrap tightly for a picnic. These are best enjoyed on the day they are prepared.
