
Heat the sesame oil in a deep skillet or wok over medium-high heat.


Add the chicken, potatoes, and onion. Season lightly with salt and black pepper, then cook for 12 to 15 minutes, stirring often, until the chicken is fully cooked and the potatoes are fork-tender.
Stir in the soy sauce, minced ginger, and honey. Cook for 2 to 3 minutes, stirring well, until the chicken and vegetables are evenly coated and the sauce starts to thicken.
Remove the skillet from the heat and let it rest for 5 minutes so the sauce can settle slightly. Sprinkle with sesame seeds and serve hot.
