
My inspiration for this is simple …. Third time is a charm. Simply put this is my third time trying to add my delicious delightful come back for seconds and thirds chick n tatoes in one pot… #april2027
Clean chicken well and cut in half lengthways separating the breasts. Score 4 times on each half. Set aside.



Put diced onions tomatoes garlic



And all seasonings in a bowl with the mustard and mix well.



Take the mixture and evenly distribute onto each half. Pressing lightly into the scoring you made. Sprinkle lime juice on each half. Cover and place in fridge for at least 30 minutes. In a frying pan put 2 tbsp butter. Scrape off all the veggies that was on the chicken(set a side). Add chicken to pan with butter, On both halves add 1tsp salt n pepper or to taste, 1tsp garlic powder to each half and same with oregano, put on medium heat and cover. Cook one side 25 minutes



Flip over to other side and cook 25 minutes.



Remove chicken from pan and set aside. Take the peeled potatoes and cook in the juices of the chicken and butter for about 15-20 minutes until golden.



Remove potatoes and add to the same pan all the veggies that we used to marinate. On top place each half of the chicken and add potatoes & 4 bay leaves. Cover and cook about 45 minutes. Check every so often to be sure nothing is sticking too much on the bottom.



While chick n pots are cooking you can make a cabbage side dish wish goes perfectly with this beautiful chick n pots meal. This is a must try !



Take all the chopped veggies and add salt n pepper to taste. Put onto a medium heat and add 1/2c of water and about 3-4 tbsp dark soy sauce depending on your taste.



Let chicken rest for 5 minutes after turning off. Plate and serve this meal which is a beautiful dish for any type of gathering.
