
Pat the salmon fillet dry with paper towels. Season all over with salt and pepper, then rub with lemon juice and the pressed garlic. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Preheat the oven to 190C/375F. In a small bowl, mix the mayonnaise, finely chopped garlic, Parmesan cheese, and cheddar cheese until well combined.

Place the marinated salmon in a lightly greased baking dish or on a lined baking tray. Spoon the cheese topping over the center of the fillet and spread it evenly, leaving a small border around the edges so the topping does not slide off while baking.

Bake for 20 to 30 minutes, depending on thickness, until the salmon is cooked through and the topping is lightly golden. Let rest for 2 to 3 minutes before serving.
