
Transform humble cabbage into a smoky, melt-in-your-mouth side dish with this simple grilling technique. These wedges are basted in a zesty lime and garlic spiced butter, resulting in perfectly charred edges and a tender, buttery center.
Prepare the cabbage by cutting it into thick wedges, ensuring the stalk remains intact to hold the leaves together during cooking. Submerge the wedges in a large bowl of cold water for a few minutes; the water trapped between the leaves will create steam, helping the cabbage cook through on the grill.
Place the cabbage wedges on the grill, positioned away from the direct heat of the coals (indirect grilling). Cover with the lid and cook for 20 minutes.
While the cabbage is grilling, prepare the spiced butter. Melt the butter in a small saucepan over low heat. Remove from the heat and stir in the rapeseed oil, crushed garlic, chopped chilli, lime zest, lime juice, white pepper, and a pinch of salt.
After the initial 20 minutes, brush the spiced butter mixture generously over one side of each cabbage wedge. Close the lid and grill for another 15 minutes.
Flip the wedges over and brush the other side with the remaining spiced butter. Once the cabbage has softened significantly, move the wedges directly over the hot coals using tongs. Continue grilling and basting until the cabbage is fully tender and shows beautiful char marks. Remove from the heat and serve immediately.
To cook this indoors, sear the cabbage wedges in a hot griddle pan until charred, then transfer to a baking tray and roast in a preheated oven at 200°C (400°F) for 20-25 minutes, basting with the spiced butter halfway through. For a vegan alternative, use a plant-based butter block instead of dairy butter.
