Start your morning with these creamy, protein-packed overnight oats featuring ripe bananas and nutty peanut butter. It's a healthy, grab-and-go breakfast that tastes like a treat and keeps you satisfied until lunch.
In a medium bowl or large mason jar, mash one banana with a fork until it reaches a smooth consistency.
Add the porridge oats, ground cinnamon, maple syrup, milk, and 2 tablespoons of peanut or almond butter. Stir thoroughly until all ingredients are well combined.
Cover the container tightly and refrigerate for at least 6 hours, or ideally overnight, to allow the oats to soften and absorb the liquid.
The next morning, give the oats a good stir. If the mixture feels too stiff, add a splash of extra milk to reach your preferred consistency.
Divide the oats into two serving bowls. Slice the remaining banana and scatter it over the top, then drizzle with extra nut butter and sprinkle with the flaked almonds.
Finish with a dollop of natural yogurt, if using, and a final pinch of cinnamon before serving.
Use overripe bananas for the best natural sweetness. If you're preparing this for a busy weekday, mix the ingredients directly in a portable jar. For a vegan version, use plant-based milk and a dairy-free yogurt alternative.
