This creamy and nutritious chia seed pudding is the perfect make-ahead breakfast or healthy snack. Packed with fiber and omega-3s, it takes just minutes to prep and can be customized with your favorite fresh fruits and toppings.
In a small jar or bowl, whisk together the chia seeds, oat milk, and 2 teaspoons of maple syrup until well combined.
Cover the container and refrigerate for at least 8 hours, or ideally overnight, to allow the seeds to absorb the liquid and thicken into a pudding consistency.
Before serving, give the pudding a quick stir. Top with fresh fruit like berries, sliced banana, or kiwi, and finish with an extra drizzle of maple syrup if desired.
For a creamier texture, stir the mixture again after about 30 minutes of chilling to prevent the seeds from clumping at the bottom. You can swap oat milk for almond, coconut, or dairy milk depending on your preference.
