
Indulge in these decadent cookie sandwiches featuring soft white chocolate chip cookies filled with a luscious strawberry mousse. Perfect for summer gatherings or a special afternoon tea treat, these sandwiches are a delightful twist on a classic flavor pairing.
In a stand mixer or using an electric hand whisk, beat the softened unsalted butter with the light brown soft sugar and golden caster sugar until the mixture is pale and fluffy.
Add the egg and vanilla bean paste to the butter mixture, beating on medium speed until well combined. Sift in the self-raising flour and add 1 tsp of salt, then beat again on medium speed until just combined, being careful not to overwork the dough.
Gently fold in the white chocolate chips until evenly distributed. Roll the dough into 12 equal balls (approximately 60g each) and arrange them on a baking tray lined with parchment paper. Cover with a clean tea towel and chill in the fridge for 24 hours, or freeze for 30 minutes to ensure the cookies hold their shape during baking.
Preheat your oven to 180°C (160°C fan/gas 4). Line two large baking sheets with parchment paper and place six dough balls on each tray, spacing them well apart. Bake for 10–12 minutes until the edges are golden but the centers remain slightly pale. Allow the cookies to cool completely on the trays.
To make the mousse, blitz 250g of the strawberries and the icing sugar in a food processor until completely smooth. Transfer the puree to a small saucepan and warm over low heat. Meanwhile, soak the gelatine leaves in a bowl of cold water for 2 minutes. Squeeze the excess water from the gelatine and stir it into the warm strawberry puree until melted. Pour into a bowl and refrigerate until cool.
Whip the double cream in a large bowl until it holds stiff peaks. Quarter the remaining 100g of strawberries and set aside. Once the strawberry puree has cooled, gently fold in the whipped cream until evenly mixed. Chill the mousse in the fridge for 2 hours to set.
To assemble, turn the cookies upside-down and match them into pairs of similar sizes. Pipe or spread a thick layer (about 2-3cm) of mousse onto the flat side of six cookies. Chill for 1 hour, then top with the remaining cookies. Use a palette knife to smooth the mousse around the edges. Chill the assembled sandwiches for at least 4 hours or overnight. Serve with the quartered strawberries and a side of ice cream.
Chilling the cookie dough for a full 24 hours significantly improves the depth of flavor and prevents the cookies from spreading too thin. If you have leftover mousse, serve it in small cups topped with crushed meringues for an easy secondary dessert.
