
Brighten up any celebration with these moist and fluffy Funfetti cupcakes. Topped with a silky cream cheese frosting and plenty of colorful sprinkles, they are the ultimate crowd-pleaser for birthdays and parties.
Preheat your oven to 180°C (160°C fan/gas mark 4) and line a 12-hole muffin tin with paper cupcake liners.
In a large mixing bowl, whisk together the sunflower oil, caster sugar, and eggs until well combined. Stir in the natural yogurt and lemon juice until the mixture is smooth.
Sift the plain flour, baking powder, custard powder, and a pinch of salt into the wet ingredients. Fold the dry ingredients in until just combined, then gently stir in 2 tablespoons of sprinkles.
Divide the batter evenly among the prepared muffin cases using an ice cream scoop or two spoons. Bake for approximately 25 minutes until golden brown and a skewer inserted into the center comes out clean.
Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
To make the frosting, beat the softened butter with the icing sugar and vanilla extract for about 5 minutes until the mixture is pale and creamy. In a separate small bowl, beat the soft cheese to loosen it, then fold it into the buttercream until smooth.
Transfer the frosting to a piping bag fitted with your choice of nozzle. Pipe swirls onto each cooled cupcake and decorate with extra sprinkles. Store chilled for up to three days.
For the best results, ensure your eggs and soft cheese are at room temperature before starting. If the frosting feels too soft to pipe, chill it in the refrigerator for 15-20 minutes. You can substitute sunflower oil with any neutral-tasting vegetable oil.
