
A cozy, all-in-one dinner featuring juicy glazed chicken thighs nestled in a fragrant rice pilaf with sweet cranberries, crunchy walnuts, and fresh apples. This effortless meal combines savory and sweet flavors for a perfect weeknight feast.
Preheat your oven to 200°C (400°F) for a standard oven or 180°C (350°F) for a fan-forced/convection oven. Prepare a 9x13 inch (22x33cm) baking dish.
Scatter the finely chopped onion and minced garlic into the baking dish and top with the butter. Bake for 15 minutes until the onion is softened and fragrant, then remove from the oven.
While the onion is baking, prepare the chicken. If the chicken thighs have skin, remove it to ensure the rice pilaf doesn't become overly greasy.
In a small bowl, whisk together the apricot jam, Dijon mustard, garlic powder, allspice, paprika, and black pepper to create a sticky glaze. Add the chicken thighs to the bowl and turn to coat them thoroughly.
To the baking dish with the onions, add the long-grain rice, apple juice, chicken broth, dried rosemary, dried thyme, salt, and pepper. Stir well to combine.
Stir in the dried cranberries and chopped walnuts until evenly distributed.
Place the glazed chicken thighs on top of the rice mixture; they will be partially submerged. Reserve any remaining glaze in the bowl.
Cover the dish tightly with aluminum foil and bake for 20 minutes. Remove the foil after this time; don't worry if there is still visible liquid.
Spoon the remaining glaze over the chicken pieces. For a better finish, give the chicken a light spray with oil. Bake uncovered for another 30 to 35 minutes until the chicken is beautifully browned and the rice is tender.
Remove the pan from the oven and let it rest for 5 minutes. Remove the chicken to a plate, stir in the diced fresh apple, and fluff the rice with a fork.
Serve the chicken alongside the rice pilaf, garnished with fresh parsley if desired.
For the best results, use long-grain white rice as it stays fluffy; basmati or jasmine are also great choices. Avoid short-grain or risotto rice, which can become too sticky. If you prefer a less sweet dish, you can replace the apple juice with an equal amount of chicken broth.
