A classic Hong Kong cha chaan teng staple, this comforting breakfast features savory fried Spam and a silky sunny-side-up egg over springy instant noodles. It's the ultimate quick and satisfying meal that brings the taste of a HK cafe right to your kitchen in just 15 minutes.
Bring 2 cups of water to a rolling boil in a medium pot over high heat.
While the water is heating, place the Spam slices in a pan over medium-high heat. Sear until the edges are crispy and golden brown. Turn off the heat and leave the Spam in the pan to stay warm.
In a separate small pan (or the same pan if space permits), fry an egg sunny-side up. Cover with a lid for about 1 minute to ensure the whites are fully set while the yolk remains soft and runny. Remove from heat immediately to prevent overcooking.
Once the water boils, stir in the instant noodle seasoning packets. Add the noodles and cook for approximately 2.5 minutes, using chopsticks or a fork to gently break them apart as they soften.
Pour the noodles and broth into a deep serving bowl. Arrange the crispy Spam and the fried egg on top. Garnish with a pinch of minced scallions and serve immediately while piping hot.
For a more authentic Hong Kong cafe experience, add a few stalks of blanched bok choy or a dash of sesame oil. If you prefer your noodles 'al dente,' reduce the boiling time by 30 seconds as they will continue to soften in the hot broth.
