This vegan banana walnut bread is soft, warmly spiced, and packed with sweet ripe banana flavor. Chopped walnuts add just the right crunch, making it perfect for breakfast, snacks, or a simple homemade dessert.
Preheat the oven to 350°F. Lightly grease a loaf pan with vegan butter or oil, or line it with parchment paper for easier removal.

In a large mixing bowl, whisk together the all-purpose flour, baking soda, sea salt, and ground cinnamon until evenly combined.

In a separate bowl, mash the bananas with a fork until mostly smooth, leaving a few small lumps for texture if desired.

Stir the melted vegetable spread, brown sugar, vanilla extract, and chopped walnuts into the mashed bananas until well mixed.

Pour the banana mixture into the dry ingredients. Fold gently with a spatula just until no dry streaks remain; avoid overmixing so the loaf stays tender.

Transfer the batter to the prepared loaf pan and spread it evenly.

Smooth the top, then bake on the center rack for about 55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan for 10 minutes before slicing.

Use very ripe, spotty bananas for the best sweetness and moisture. If the top browns too quickly, loosely tent the loaf with foil during the last 15 minutes of baking. Store cooled slices in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
