These juicy lamb burgers are infused with aromatic Moroccan spices and sweet dried apricots for a unique twist on a classic. Served in wholemeal buns with fresh toppings, they offer a sophisticated and flavorful meal that's ready in under 30 minutes.
Place the roughly chopped onion, fresh ginger, garlic, and fresh coriander into a food processor. Pulse until the mixture is finely chopped.
Add the ground coriander, ground cumin, cinnamon, dried apricots, and lamb mince to the processor. Season with salt and pepper, then pulse until the ingredients are well combined but still slightly chunky to maintain a good texture.
Divide the mixture into six portions and shape them into burger patties. Preheat your grill to a medium-hot setting.
Grill the patties for 4-5 minutes on each side, or until they are cooked through and nicely charred.
Assemble the burgers in wholemeal buns with lettuce, sliced tomatoes, red onion, and a dollop of mayonnaise.
For the best texture, avoid over-processing the meat; a few pulses are enough to incorporate the spices. If you don't have a grill, these patties can be pan-fried in a little olive oil over medium heat for the same amount of time.
