
Elevate your next cookout with these juicy, flavor-packed beef burgers featuring a hidden molten blue cheese center. Infused with zesty horseradish and aromatic herbs, they are the ultimate gourmet treat for any barbecue lover.
In a large mixing bowl, combine the beef mince, finely chopped shallot, horseradish sauce, dried herbs, and grated garlic. Season generously with salt and black pepper, then use your hands to mix thoroughly, squeezing the meat through your fingers to ensure it binds well.
Divide the beef mixture into four equal portions. Shape each into a patty about 3cm thick. If using blue cheese, press a small piece into the center of each patty and fold the meat over to completely seal it inside—this ensures the cheese melts beautifully without leaking.
Place the prepared patties on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes (or up to overnight) to firm up. Meanwhile, prepare your barbecue for medium heat or wait until charcoal embers turn ashen.
Lightly brush the patties with vegetable oil. Grill for about 5 minutes per side for a medium finish, or longer if you prefer well-done. Alternatively, pan-fry over medium heat for 4-5 minutes per side until the internal temperature reaches 70°C.

For the best texture, avoid overworking the meat once it's combined. If you aren't a fan of blue cheese, try using a sharp cheddar or a piece of mozzarella. Ensure the cheese is fully enclosed by the meat to prevent it from escaping onto the grill.
