
A refreshing and vibrant salad that perfectly balances the sweetness of crisp red apples with the salty tang of creamy feta cheese. Drizzled with a zesty honey-lemon dressing and a hint of pul biber, it's an ideal light lunch or elegant side dish.
Prepare the apples by coring and quartering them, then slice each quarter into four thin pieces. In a large bowl or on a serving platter, toss the apple slices with the mixed salad leaves.
Crumble the feta cheese into small chunks and scatter them over the salad base. Finely zest the lemon and sprinkle it across the top for a bright citrus aroma.
In a small jar or bowl, whisk together the lemon juice, olive oil, and honey. Season with a generous amount of freshly ground black pepper and a pinch of salt until the dressing is well combined.
Drizzle the honey-lemon dressing evenly over the salad. Finish with a sprinkle of pul biber (Aleppo pepper) for a touch of mild heat and color, then serve immediately.
To keep the apples from browning if you're not serving immediately, toss the slices in a little lemon juice right after cutting. For the best crunch, use firm varieties like Gala, Fuji, or Honeycrisp. If you can't find pul biber, a pinch of mild chili flakes or sumac works beautifully as a substitute.
