
Gado gado is a vibrant Indonesian salad layered with crisp vegetables, tender potatoes, eggs, and golden tempeh. A warm, creamy peanut sauce ties everything together with sweet, tangy, mildly spicy flavor.
Make the peanut sauce: In a small saucepan, combine the peanut butter, red curry paste, kecap manis, sambal oelek, salt, garlic, lime juice, coconut milk, and water.
Set the pan over medium-low heat and bring the sauce to a gentle simmer. Cook for about 5 minutes, stirring often, until smooth and pourable; add a splash more water if it becomes too thick.
Taste the sauce and adjust the balance with extra lime juice for brightness, sugar or kecap manis for sweetness, or salt for seasoning. Cover and keep warm.
Prepare the vegetables: Bring a saucepan of water to a boil. Add the potato pieces and cook for about 5 minutes, or until tender, then lift them out with a slotted spoon and drain.
Add the bean sprouts to the same boiling water and cook for about 2 to 3 minutes, just until wilted. Drain well and gently press out excess water.
Add the spinach to the hot water and push it under briefly until just wilted. Drain, cool slightly, and squeeze out excess moisture.
Cook the tempeh: Slice the tempeh into short, thin strips about 0.75 x 5 cm. Heat the oil in a skillet over medium-high heat.
Fry the tempeh for about 2 minutes per side, until deep golden and crisp. If using firm tofu instead, cook for about 1 1/2 minutes per side.
Assemble the salad on one large platter or individual plates with the potatoes, spinach, bean sprouts, cucumber, and crispy tempeh. Add the boiled eggs on top.
Pour the warm peanut sauce into a bowl for serving. Serve the gado gado with chopped peanuts, sliced red chilli, and prawn crackers on the side.
Serve the sauce warm, as it thickens as it cools. For a vegetarian version, skip the prawn crackers or use vegetable crackers. Firm tofu works well in place of tempeh; press it dry before frying so it crisps properly. Components can be prepped a few hours ahead, but assemble just before serving for the best texture.
