
This quick sesame shirataki noodle stir-fry is light, savory, and full of umami from flaky salted salmon, soy sauce, mirin, and sake. It is a simple Japanese-inspired meal that comes together fast for lunch or a light dinner.
Flake the cooked salted salmon into bite-size pieces, discarding the skin and any bones. Roughly cut the shirataki noodles into shorter lengths for easier eating.

Place the shirataki noodles in a small pan of water and bring to a boil. Drain well to remove excess moisture and any odor.

Heat the sesame oil in a nonstick skillet over medium heat. Add the drained shirataki noodles and salmon, then stir-fry for 1 to 2 minutes.

Add the sake, mirin, and soy sauce. Continue stir-frying until the liquid has mostly evaporated and the noodles are evenly coated.
Transfer to a plate and serve hot.
Boiling and draining the shirataki first helps improve both texture and flavor. If your salted salmon is very salty, reduce the soy sauce slightly. Leftovers can be refrigerated in an airtight container for up to 1 day and reheated briefly in a skillet.
