
This healthy homemade granola gets natural sweetness from prunes and bright citrus flavor from fresh orange. Baked with tahini, oats, almonds, and seeds, it turns crisp and satisfying for an easy breakfast or snack with yogurt.
Preheat the oven to 200C/180C fan/gas 6. Line a large baking tray with parchment paper. In a small bowl, mash the drained prunes with the orange zest, orange juice, and tahini until you have a thick paste.
Place the oats in a large bowl and add the prune mixture. Rub and knead everything together with your hands until the oats are evenly coated and slightly clumpy. Spread the mixture over the prepared tray in an even layer. Bake for 20 minutes, stirring and turning the granola every 5 minutes so it dries out and browns evenly.
Remove the tray from the oven and immediately stir in the flaked almonds, sunflower seeds, and pumpkin seeds. Toss the mixture a few times to help it cool quickly. Once completely cool, store in an airtight container for up to 2 weeks. Serve about 50 g granola per person with 100 g soya or plain yogurt.
Make sure the granola is fully cool before storing or it may soften in the container. Rolled oats work best here; instant oats can turn powdery. Plain dairy-free or regular yogurt both work well for serving.
