This easy baked salmon recipe pairs tender fillets with crisp cabbage, creamy Japanese mayonnaise, and a golden cheese topping. It is a quick, satisfying dinner that comes together fast and delivers rich flavor with minimal effort.
Thinly slice the cabbage and place it in a bowl. Toss with a small spoonful of mayonnaise, a light seasoning of salt and pepper, and mix until evenly coated.

Check the salmon fillets for any pin bones and remove them if needed. Slice the fillets into thinner pieces if they are thick, then season both sides lightly with salt and pepper.

Spread the cabbage in a small oven-safe baking dish or toaster oven tray. Arrange the salmon on top, spread the remaining mayonnaise over the fish, and sprinkle evenly with cheese.

Bake in a preheated toaster oven or oven at 400°F (200°C) for 7 to 8 minutes, or until the salmon is cooked through and the cheese is melted and lightly browned. Serve immediately.
Use mozzarella, cheddar, or a pizza-style shredded cheese for easy melting. Do not overbake, or the salmon can dry out. Leftovers can be refrigerated in an airtight container for up to 1 day and reheated gently.
