
This baked salmon with apple is light, fresh, and ready in under 30 minutes. Thin apple slices roast alongside the fish, adding gentle sweetness that balances the lemon and olive oil.
Preheat the oven to 200°C/400°F. Lightly oil a baking sheet or line it with parchment, then place the salmon fillets skin-side down. Check for pin bones and season the fish with salt.

Core the apple and slice it thinly into half-moons so it softens quickly in the oven.

Arrange the apple slices over and around the salmon. Squeeze lemon juice evenly over the fish and apples, then drizzle with olive oil.

Bake for 12-15 minutes, or until the salmon flakes easily and reaches 63°C/145°F in the thickest part. Serve warm with the roasted apple slices.

Use a crisp sweet-tart apple such as Granny Smith, Honeycrisp, or Pink Lady. Slice the apple thinly so it cooks in the same time as the salmon. For crispier skin, pat the salmon dry before seasoning and avoid overcrowding the pan.
