
This quick peanut brittle is crisp, buttery-free, and packed with roasted peanut flavor. With just three ingredients and a few minutes on the stove, it makes an easy homemade candy for gifting, snacking, or holiday sharing.
Line a baking tray or large plate with baking parchment and set it aside. Place the caster sugar in a medium frying pan over medium heat and cook for 4-5 minutes until fully melted and deep amber in color. Do not stir the sugar, as this can cause crystallization; instead, gently swirl or tilt the pan so it melts evenly.
Add the roasted peanuts and stir quickly with a wooden spoon to coat them in the caramel. Immediately pour the mixture onto the prepared tray, spread it out carefully into an even layer, and sprinkle with the sea salt flakes. Let the brittle cool completely until firm, then break into pieces.
Watch the caramel closely during the final minute, because sugar can burn very quickly once it turns amber. If you prefer, use unsalted roasted peanuts and keep the sea salt topping for balance. Store the cooled brittle in an airtight container at room temperature for up to 2 weeks.
