These vibrant green pancakes are naturally colored with spinach and perfect for a spooky Halloween breakfast. Fun to decorate and delicious to eat, they are a healthy and festive way to start your holiday celebrations.
Place the self-raising flour, baking powder, sugar, eggs, 2 tablespoons of melted butter, milk, and chopped baby spinach into a high-speed blender.
Whizz the ingredients until the batter is completely smooth and has turned a bright, uniform green color.
Melt a small knob of butter in a large non-stick frying pan over medium heat. Pour small dollops of batter into the pan, cooking two or three pancakes at a time.
Cook for approximately 2 minutes until the edges are set and small bubbles begin to rise to the surface. Flip the pancakes and cook for another 1-2 minutes. Keep the finished pancakes warm in a low oven while you cook the remaining batter.
To serve, decorate the pancakes with 'googly eyes' made from banana and kiwi slices with blueberry pupils. Add pointy banana slices for teeth and serve with a drizzle of maple syrup.
If you don't have a high-speed blender, finely puree the spinach with the milk first before whisking it into the dry ingredients to ensure no leafy chunks remain. For the best 'bright green' look, avoid over-browning the pancakes on the pan.
