Peel the red onions, cut them in half through the root, and slice them into very thin half-moons.
Place the sliced onions in a medium glass bowl or a wide-mouthed jar.
Add the salt, sugar, and freshly squeezed lime juice to the onions.
Toss the mixture thoroughly until the onions are well coated and the sugar and salt have dissolved.
Allow the onions to macerate at room temperature for at least 30 minutes. During this time, they will soften and develop a beautiful, vibrant pink color.
