Enjoy perfectly tender and slightly charred corn on the cob in a fraction of the time using your air fryer. Seasoned with smoked paprika and onion powder, this quick side dish is finished with a fresh squeeze of lime for a vibrant burst of flavor.
Place the corn cob pieces in a large mixing bowl. Drizzle with the vegetable oil and toss until every cob is evenly coated.
In a small bowl, mix the salt, freshly ground black pepper, smoked paprika, and onion powder. Sprinkle the spice blend over the corn and rub it into the kernels so they are well-seasoned.
Preheat your air fryer to 180°C (350°F). Arrange the corn pieces in the air fryer basket in a single layer, ensuring they aren't overcrowded.
Cook for 15–18 minutes, turning the cobs halfway through the cooking time. The corn should be tender and starting to develop light brown, charred spots.
Transfer the hot corn to a serving platter. Garnish with a handful of fresh chopped parsley and serve immediately with lime wedges for squeezing over.
For a Mexican-inspired twist, brush the cooked corn with a little mayonnaise and sprinkle with crumbled feta or cotija cheese. If you prefer a more intense char, increase the air fryer temperature to 200°C for the final 2 minutes of cooking.
