
This saffron jewelled rice pilaf is fragrant, colorful, and layered with sweet dried fruit, toasted nuts, and warm spices. Finished with pomegranate and fresh cilantro, it makes an elegant side dish for holidays, dinner parties, or a special family meal.
Crush the saffron threads to a fine powder with a mortar and pestle. Stir in the boiling water and set aside to steep while you prepare the rice.
Heat 2 tbsp ghee or butter in a large saucepan over medium-high heat. Add the fennel seeds and cumin seeds and cook for about 30 seconds, stirring, until aromatic.
Add the onion and garlic. Cook for about 5 minutes, stirring often, until the onion softens. Stir in the cinnamon stick, cardamom, and allspice, then cook for another 30 seconds.
Add the basmati rice and stir for 1 minute so the grains are coated in the spiced fat. Pour in the vegetable stock, then add the salt, bay leaves, lemon zest, dried cranberries, dried apricots, golden raisins, pistachios, and slivered almonds.
Bring the mixture to a gentle simmer. Cover with a tight-fitting lid, reduce the heat to low, and cook for 14 minutes without lifting the lid or stirring.
Check that the liquid has been absorbed. Remove the saucepan from the heat, keep it covered, and let the rice rest for 10 minutes.
Drizzle half of the saffron water over the rice. Gently fluff with a rubber spatula or fork, then add the remaining saffron water and the remaining melted ghee or butter. Fold carefully until the rice is evenly golden without breaking the grains.
Transfer the pilaf to a serving platter. Scatter over the pomegranate seeds, chopped cilantro, and toasted pistachios, then serve warm.
Rinse the basmati rice until the water runs mostly clear for fluffier grains. Keep the lid closed during cooking and resting so the rice steams evenly. You can swap dried cranberries for barberries, chopped dates, or extra raisins, and use chicken stock instead of vegetable stock if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of water.
