
Indulge in the ultimate breakfast fusion with these fluffy, golden pancakes featuring a hidden strawberry jam center. Coated in granulated sugar, they capture the nostalgic flavor of a classic jam doughnut in a stackable pancake form.
In a large jug or mixing bowl, whisk together the eggs and milk until the mixture is smooth and well-combined.
In a separate large bowl, sift together the self-raising flour, baking powder, and a pinch of salt. Create a well in the center of the dry ingredients.
Gradually pour the egg and milk mixture into the flour well, whisking constantly until you have a smooth batter. Stir in the caster sugar and the 50g of melted butter. For the best texture, let the batter rest for 30 minutes, though you can cook immediately if preferred.
Heat a small knob of butter in a large non-stick frying pan over medium heat. Once the butter is frothy, pour in a small ladle of batter to form a pancake. Cook for about 30 seconds.
Carefully spoon 2 teaspoons of strawberry jam into the center of the pancake, spreading it slightly. Immediately ladle a small amount of extra batter over the jam to seal it completely.
Cook for another 2 minutes until bubbles appear on the surface and the edges look set. Use a fish slice to flip the pancake and cook for a further 1-2 minutes until both sides are golden brown.
Wipe the pan clean and repeat the process with the remaining batter and jam. Serve the pancakes warm, generously sprinkled with granulated sugar.
To prevent the jam from leaking, ensure the top layer of batter completely covers the jam before flipping. If you want a more authentic doughnut experience, toss the hot pancakes in a bowl of granulated sugar to coat both sides completely. For a different flavor, try using raspberry jam or lemon curd.
