
Rinse the chicken breasts if desired, pat them dry היט, and cut them into bite-size chunks. Slice the roasted red peppers into strips if they are not already prepared.


Heat the olive oil in a large pot over medium heat. Add the chicken, black pepper, dried oregano, garlic powder, and roasted red peppers, then cook for 4 to 5 minutes, stirring often, until the chicken is lightly browned on the outside.



Stir in the uncooked yellow rice. Add the amount of water and any seasoning packet or additional ingredients required on the rice package, then mix well to combine.


Bring the mixture to a boil. Reduce the heat to low, cover the pot, and cook for 20 to 25 minutes, or until the rice is tender and the chicken is fully cooked through.


Remove the pot from the heat and let it sit for 5 minutes. Fluff the rice with a fork, taste and adjust seasoning if needed, then serve warm.
