
Elevate your side dish game with these vibrant Macho Peas, inspired by the Nando's classic. A perfect blend of sweet peas, fresh herbs, and a kick of chili, roughly mashed for a rustic and satisfying texture.
Bring a large pan of salted water to a boil. Add the frozen peas and cook according to the package instructions, usually about 3 minutes, until tender but still bright green.
Drain the peas thoroughly in a colander. Return them to the warm pan and use a fork or potato masher to roughly crush about one-third of the peas, leaving the rest whole for texture.
Add the softened butter, olive oil, chopped parsley, mint, and chili flakes to the pan. Stir well over low heat for 1 minute to melt the butter and infuse the flavors.
Season with a generous pinch of salt and black pepper to taste. Toss everything together until the peas are evenly coated in the herb butter.
Transfer the peas to a serving bowl. Serve immediately with fresh lemon wedges on the side for squeezing over just before eating.
For a vegan-friendly version, simply replace the butter with a plant-based spread or an extra tablespoon of olive oil. If you enjoy extra heat, you can add a finely diced fresh bird's eye chili along with the flakes.
