In a medium mixing bowl, combine the vegan cashew cheese, finely chopped walnuts, chives, and garlic granules. Add a pinch of salt and pepper, then mix thoroughly until the ingredients are evenly distributed.
Cover the bowl and place it in the refrigerator to chill for at least 1 hour. This step is essential to firm up the mixture for easier rolling.
Prepare your coatings by placing the finely chopped parsley in one shallow bowl and the Aleppo chili flakes or sumac in another.
Take about a tablespoon of the chilled mixture at a time and roll it between your palms to form 20 small, uniform balls.
Roll each ball in either the parsley or the spice mixture until they are fully and evenly coated.
