
Preheat the oven to 400°F. Rinse the chicken if desired, pat it completely dry, and cut it into bite-size cubes.



Place the cubed chicken in a large baking dish or roasting pan. Pour the melted butter or margarine over the top and toss until all the pieces are evenly coated.



Add the minced garlic, black pepper, seasoned salt, crushed red pepper, and ground cumin. Stir well so the seasonings are distributed evenly over the chicken.



Scatter the sliced onions over the chicken and gently mix them in.



Bake uncovered for 25 to 30 minutes, stirring once halfway through, until the chicken is nearly cooked through and the onions have softened.

Sprinkle the shredded sharp cheddar evenly over the chicken. Return the dish to the oven and bake for about 5 minutes more, or until the cheese is fully melted and the chicken reaches 165°F internally.



Serve hot with cooked yellow rice or flour tortillas.
