
Sink your teeth into this ultimate comfort sandwich featuring golden, parmesan-crusted chicken schnitzel. Paired with a zesty sriracha mayo and fresh, crunchy greens, it's a gourmet lunch that's incredibly easy to make at home.
Place the chicken breast flat on a cutting board. Carefully slice it through the middle horizontally to create two thinner, equal-sized fillets. Cover the fillets with a sheet of baking parchment and gently pound them with a rolling pin until they are about ½cm thick.
Prepare a breading station with three shallow dishes: one with the seasoned flour, the second with the beaten egg, and the third with a mixture of breadcrumbs and grated parmesan. Dredge each chicken fillet in the flour, shaking off any excess, then dip into the egg, and finally press into the breadcrumb mixture until fully coated.
Heat about ½cm of oil in a large frying pan over medium heat. Once hot, fry the schnitzels for 4-5 minutes per side until the coating is crisp and deep golden brown and the chicken is cooked through. Transfer to a plate lined with kitchen paper to drain.
In a small bowl, whisk together the mayonnaise and sriracha. Spread the spicy mayo generously over two slices of bread. Layer the bottom slices with shredded lettuce, the warm chicken schnitzel, and sliced cucumber. Top with the remaining bread slices and serve immediately.
For an even crunchier texture, try using panko breadcrumbs. To ensure the coating stays on the chicken, let the breaded fillets rest in the fridge for 10 minutes before frying. You can also toast the bread slices for extra stability and flavor.
