
A comforting British classic featuring juicy sausages nestled in a giant, golden Yorkshire pudding batter. Perfectly crisp on the outside and soft in the middle, it's the ultimate family dinner when served with rich onion gravy.
Preheat your oven to 220°C (200°C fan/gas 7). Arrange the chipolatas in a 20 x 30cm roasting tin, drizzle with the sunflower oil, and bake for 15 minutes until the sausages are lightly browned.
While the sausages are browning, prepare the batter. Sift the flour into a large mixing bowl with 1/2 tsp of salt. Create a well in the center and crack in the eggs. Using an electric whisk, combine the eggs with the flour while slowly pouring in the milk. Continue whisking until the batter is completely smooth and lump-free.
Let the batter rest until the sausages are ready. Remove the tin from the oven—the fat should be sizzling hot. If it isn't bubbling, place the tin on the stovetop over high heat for a minute until the oil is smoking slightly.
Carefully pour the batter into the hot tin around the sausages. Immediately transfer it to the top shelf of the oven and bake for 25–30 minutes. Do not open the oven door during this time. Once risen and deep golden brown, serve hot with gravy and your favorite seasonal vegetables.
For the best rise, ensure the oil is smoking hot before adding the batter. Letting the batter rest for at least 15 minutes before cooking helps the starch granules swell, resulting in a lighter, airier texture.
