Preheat your oven to 200°C (180°C fan/gas mark 6). Thoroughly wash and scrub the Jersey Royal potatoes to remove any dirt, then pat them completely dry with a clean kitchen towel to ensure they crisp up while roasting.
Place the potatoes in a large roasting tin. Add the halved head of garlic, 2 tablespoons of olive oil, half of the thyme sprigs, and most of the rosemary. Season generously with flaky sea salt and a good grinding of black pepper, then toss everything together to coat evenly. Roast for 30 minutes.
Remove the tin from the oven and create a space in the center. Nestle the box of cheese (ensuring any plastic wrapping is removed) into the gap. Cut a few shallow slits into the top of the cheese rind, drizzle with a little more oil, and scatter over the remaining herbs.
Return the tin to the oven and bake for another 15 minutes until the potatoes are golden and tender, and the cheese is completely melted and gooey. Serve immediately from the tin or arranged on a platter with cured meats on the side.
For the best results, use a wooden-boxed cheese like Tunworth or Camembert, as the box helps hold the shape while melting. If your cheese doesn't come in a box, place it in a small ovenproof ramekin.
