
A simple yet sophisticated Mediterranean appetizer featuring creamy baked feta, sweet burst cherry tomatoes, and a spicy-sweet chili honey finish. Perfect for sharing with friends alongside warm, crusty bread and a fresh salad.
Preheat your oven to 180°C (160°C fan/gas mark 4).
Place the block of feta cheese in the center of a medium-sized baking dish, approximately 25cm x 20cm.
Scatter the cherry tomatoes and the finely sliced red onion around the cheese.
In a small jug or bowl, whisk together the extra virgin olive oil, crushed garlic, chopped herbs, and honey. Season with a pinch of salt and black pepper.
Drizzle the herb and honey mixture evenly over the tomatoes and the feta block.
Bake for 35 to 40 minutes until the tomatoes have softened and burst, and the feta is creamy and lightly golden.
Before serving, drizzle with a little extra chili-infused honey and olive oil. Serve warm with crusty bread and a crisp green salad.
For a spicier kick, add a pinch of dried chili flakes to the oil mixture before baking. If you don't have store-bought chili honey, simply mix a pinch of cayenne pepper or red pepper flakes into regular honey.
