
A comforting family favorite featuring juicy sausages and baked beans in a smoky BBQ sauce, all topped with creamy mashed potatoes and melted cheddar cheese. This easy-to-make pie is the ultimate crowd-pleaser for a cozy weeknight dinner.
Prepare the mashed potato topping: Bring a large pot of salted water to a boil. Add the chopped potatoes and cook for 15-20 minutes until tender. Drain the potatoes and return them to the pan for a few minutes to air-dry. Add the butter and milk, then mash until smooth and creamy. Cover with a lid to keep warm.
Preheat your oven to 200°C (180°C fan/Gas 6). While the potatoes are boiling, heat the sunflower oil in a large frying pan over medium heat. Sauté the onion for 6-8 minutes until softened.
Add the sausage pieces to the pan and fry for about 4 minutes until browned on all sides. Stir in the garlic and cook for 1 minute, then add the smoked paprika and cook for another minute to release the aroma.
Pour the baked beans and barbecue sauce into the pan. Stir well and cook until the mixture just begins to simmer, then remove from the heat.
Transfer the sausage and bean mixture into an ovenproof dish (approximately 20x20cm). Spread the mashed potatoes evenly over the top and sprinkle with the grated cheddar cheese.
Bake in the oven for 25-30 minutes until the filling is bubbling around the edges and the cheese topping is golden and crisp. Scatter fresh chives over the top before serving.
For a spicier version, add a pinch of chili flakes or a dash of hot sauce to the bean mixture. You can easily make this vegetarian by using plant-based sausages and a vegetarian-friendly hard cheese. If you want a crispier top, use a fork to create ridges in the mashed potato before adding the cheese.
