
A classic Korean comfort dish featuring tender pork marinated in a bold, spicy-sweet gochujang sauce. Perfect for a quick weeknight dinner, this stir-fry delivers deep caramelization and authentic flavors in every bite.
Slice the pork shoulder into very thin, bite-sized pieces. If the cut is thick, halve it lengthwise first to ensure the slices are uniform and cook quickly.
In a large bowl, combine the marinade ingredients: grated pear, minced ginger, garlic, soy sauce, brown sugar, sesame oil, and gochujang. Add the pork slices and toss until thoroughly coated. Let the meat marinate for at least 30 minutes, or overnight in the refrigerator for maximum flavor.
Heat the cooking oil in a large non-stick skillet or wok over high heat. Add the sliced onion and cook for about 2 minutes until it becomes translucent and slightly softened.
Add the marinated pork to the skillet. Stir-fry for 5-7 minutes, or until the pork is dark golden, caramelized, and just cooked through.
Serve immediately over steamed white rice or cauliflower rice. Garnish with freshly sliced scallions and toasted sesame seeds.
For easier slicing, place the pork in the freezer for 30 minutes before cutting. The pear in the marinade acts as a natural tenderizer; if unavailable, a grated red apple is an excellent substitute.
