
Bring the vibrant flavors of a Korean BBQ restaurant to your home with this fast and flavorful pork belly stir-fry. These delicious lettuce wraps, filled with caramelized pork, savory ssamjang, and spicy kimchi, make for a perfect 30-minute weeknight dinner.
Prepare your ingredients by slicing the pork belly and onions. Heat a large skillet or wok over medium-high heat with 1 tablespoon of oil. Add the pork belly slices and onions to the pan, searing them until the pork is well-browned and the onions have softened and caramelized.
Add the mushrooms to the pan, allowing them to sauté in the rendered pork fat. Continue cooking until the pork, onions, and mushrooms are all tender and deeply golden. Using kitchen shears, cut the pork belly slices into bite-sized, 1-inch segments directly in the pan.
To serve, assemble the wraps by placing a piece of pork, some onions, and mushrooms onto a fresh red-leaf lettuce leaf. Top with a small amount of kimchi and a dollop of ssamjang paste. Add raw scallions, a slice of green pepper, and a sliver of garlic for extra punch. Fold the leaf and enjoy in one bite, ideally served with a side of warm steamed rice.
For the best texture, ensure your pan is very hot before adding the pork to get a good sear. If you cannot find red-leaf lettuce, romaine hearts or perilla leaves (kaennip) are excellent traditional alternatives for the wraps.
