
Succulent thick-cut pork chops glazed with a sweet and tangy honey mustard sauce, roasted alongside tender, garlic-infused new potatoes. This easy one-pan dinner is perfect for busy weeknights and packed with savory flavor.
Preheat your oven to 200°C (180°C fan/gas mark 6). On a large, shallow roasting tray, combine the halved new potatoes, olive oil, bashed garlic cloves, and fresh thyme sprigs. Use your hands to toss everything together until the potatoes are well-coated, then season generously with salt and pepper.
Roast the potatoes for 25 minutes, or until they are just starting to become tender when pierced with a sharp knife.
While the potatoes roast, whisk together the honey and wholegrain mustard in a small bowl to create the glaze. Season the pork chops on both sides with salt and pepper.
Remove the tray from the oven and nestle the pork chops among the potatoes. Brush the top of each chop with half of the honey mustard glaze.
Return the tray to the oven and bake for 10 minutes. Carefully flip the pork chops over and spoon the remaining glaze over the other side.
Continue to bake for another 10 minutes, or until the pork is cooked through and the potatoes are golden and crisp. Let the meat rest for a few minutes before serving.
For extra crispy potatoes, ensure they are spread out in a single layer and not overcrowded on the tray. If you prefer a bit of heat, add a pinch of red chili flakes to the honey mustard glaze.
