
A deeply flavorful Italian-style meat sauce featuring oven-roasted crispy beef mince and a savory base of pancetta and aromatic vegetables. This slow-simmered ragu is the ultimate comfort food and tastes even better when made a day in advance.
Preheat your oven to 190°C (170°C fan/gas 5). Place the beef mince in a shallow roasting tin, breaking it up with a spoon, and roast for 5 minutes. Remove from the oven, give it a stir, then nestle in the star anise and cloves. For easier removal later, you can tie the whole spices in a small piece of muslin cloth.
Return the beef to the oven and roast for another 30–40 minutes, stirring and scraping the bottom of the pan occasionally, until the meat is deep brown and crispy. Once finished, set the tin aside.
While the beef is roasting, heat the olive oil in a large saucepan over medium heat. Add the pancetta and cook for 8–10 minutes until it becomes crispy and browned on all sides.
Stir in the finely chopped onions, carrots, celery, and grated garlic. Sauté for 8–10 minutes until the vegetables have softened and become fragrant.
Add the sliced mushrooms, dried oregano, and bay leaves to the pan. Sprinkle over the sugar and stir in the tomato puree. Pour in the red wine and red wine vinegar, bring to a boil, and simmer for a few minutes until the liquid has reduced by about a third.
Add the canned chopped tomatoes to the saucepan. Fill one of the empty cans with water and add that as well. Stir in the beef stock pot or cube until dissolved.
Scrape the roasted crispy beef and the whole spices into the saucepan. Season with salt and pepper, then reduce the heat to low. Simmer gently for about 1 hour 30 minutes until the sauce is thick, glossy, and rich. Remove the star anise, cloves, and bay leaves before serving.
For the best results, allow the ragu to cool completely and chill it in the fridge for 24–48 hours; the flavors develop significantly over time. If you don't have pancetta, smoked bacon lardons are an excellent substitute. Serve over pappardelle or rigatoni with a generous grating of fresh Parmesan cheese.
