
This easy one-pot corn rice is infused with rich garlic butter and simmered in savory chicken stock for maximum flavor. It's a versatile, fluffy side dish that pairs perfectly with grilled meats or works as a comforting standalone meal.
Select a small pot or a large saucepan (approximately 20-22 cm / 8-9 inches) with a tight-fitting lid.
Melt half of the butter (2 tbsp) in the pot over high heat. Add the minced garlic and sauté for 15 seconds until fragrant. Stir in the corn kernels and half of the salt, cooking for about 2 minutes.
Add the long-grain rice to the pot and stir for 30 seconds to coat the grains in the garlic butter. Pour in the chicken stock, the remaining salt, and a pinch of pepper.
Stir the mixture and bring it to a full simmer, ensuring the entire surface is bubbling. Place the lid on tightly and immediately turn the heat down to medium-low (or low if your stove is particularly strong).
Cook for 12 minutes. Do not lift the lid or stir during this time. After 12 minutes, the liquid should be fully absorbed; you can tilt the pot slightly to check without fully removing the lid.
Remove the pot from the heat and let it rest, covered, for 10 minutes. This resting phase is crucial for the rice to finish steaming and become fluffy.
Lift the lid and add the remaining butter. Fluff the rice with a fork to melt the butter through, then toss in the sliced green onions. Transfer to a serving bowl and serve hot.
For a vegetarian version, simply substitute the chicken stock with vegetable broth. If using fresh corn, you can sauté the kernels a bit longer to get a slight char for extra depth of flavor. Ensure your lid is very tight-fitting to keep the steam inside during the cooking and resting phases.
