
A rich, moist, and aromatic steamed pudding packed with sweet dates, grated carrots, and tropical coconut. This festive dessert is naturally vegan-friendly and can be made months in advance for a stress-free holiday treat.
Prepare the egg substitute by mixing 2 tbsp of chia seeds with 6 tbsp of water. Set aside for about 5 minutes until the mixture thickens into a gel-like consistency.
Place the pitted dates and orange juice into a food processor. Blitz until the mixture forms a smooth purée.
In a large mixing bowl, combine the flour, breadcrumbs, sugar, suet, desiccated coconut, mixed spice, baking powder, cinnamon, sultanas, and grated carrots. Add the date purée and the thickened chia mix, stirring well until all ingredients are thoroughly incorporated.
Lightly grease a 1.2-litre pudding basin with sunflower oil and line the base with a small circle of baking parchment. Spoon the pudding mixture into the basin, pressing it down firmly to remove air pockets.
Cover the basin with a layer of pleated baking parchment and a layer of foil. Secure tightly around the rim with kitchen string to create a waterproof seal.
Place an upturned saucer or a trivet in the bottom of a large pot. Set the pudding basin on top and fill the pot with boiling water until it reaches halfway up the side of the basin. Cover the pot and simmer gently for 6 to 7 hours, topping up with more boiling water as needed.
Test the pudding by inserting a skewer through the foil into the center; it should come out with moist crumbs but no wet batter. Let it cool completely. Store in a cool, dry place for up to a year.
On the day of serving, re-steam the pudding using the same method for 2 hours. Let it rest for 10 minutes before carefully turning it out onto a serving plate. Serve warm with coconut custard.
For the best texture, use Medjool dates as they provide a deeper caramel flavor. If you don't have mixed spice, you can substitute with a blend of ground ginger, nutmeg, and cloves. Ensure the water level in the pot never boils dry during the long steaming process.
